Imagine this - you've had a hectic afternoon and are wondering how to find a moment of peace. It's time for a snack and you actually took time to bake over the weekend. Prepackaged in your fridge are the most chocolatey, mood boosting, healthy brownies!
You close email and all other tabs open on your computer to enjoy a few quiet moments. You take a big bite out of your brownie and wash it down with your favorite herbal tea 😊
Sweet potatoes are a wonderful grounding food to eat before your period or any time you feel heightened levels of stress and anxiety. They help cleanse your liver of excess hormones (think less bloating, inflammation and clearer skin) and soothes your pancreas, which can make you feel more at peace.

That's right, these inner buddha sweet potato brownies contain the medicinal mushroom, reishi, which is known for its relaxing properties. With every bite, you'll promote an immediate sense of calm.
These brownies are also low in sugar and are good for your gut health by using a prebiotic flour which feeds the good bacteria in your stomach.
Time to start baking!

INGREDIENTS:
1 cup roasted sweet potato
1/2 tsp. cinnamon
1/4 tsp. baking powder
1/2 tsp. vanilla extract
1/4 cup Tigernut flour (gluten free & a prebiotic flour that promotes good gut health. It has a nutty, sweet flavor)
1/4 cup melted coconut oil
1/4 cup raw honey
3 eggs (or 3 tbsp. flaxseed mixed with 3 tbsp. water to make flaxeggs if you don't eat eggs)
1/4 cup cacao powder

DIRECTIONS:
1. Roast one large sweet potato in the oven at 425 degrees for 40-45 minutes. Or use your Insta Pot!
2. In a bowl, add all the wet ingredients - eggs, honey, coconut oil, sweet potato and vanilla extract
3. Mix well
4. Add all dry ingredients (except the chocolate chips) Tigernut flour, baking powder, cinnamon, cacao powder, and reishi powder
5. Mix well, then fold in chocolate chips
6. In a 8x8 baking pan, spray with nonstick spray and add brownie mixture. Smooth out with the back of a spoon
7. Bake at 350 degrees for 25-30 minutes
Voila! Your very own sweet potato brownies that will reconnect with your inner buddha 😊 I usually eat them right out of the oven and top with coconut milk cool whip!
